1/4 cup olive oil
4 cups thinly sliced potatoes
2 cups crushed tomatoes
2 cloves garlic, minced
1/2 cup minced shallots or onion
*2 cups fish stock (see below)
2 teaspoons parsley, divided
1 tablespoon salt
1 teaspoon Old Bay Seasoning
1 pound rockfish fillets, chunked
1 pound flounder or sea-bass, chunked
1 pound lump crabmeat

Place oil in stock pot. Add potatoes and tomatoes and toss.  Add garlic and shallots;  sauté until soft. Add preheated fish stock, 1 teaspoon parsley, salt and Old Bay.  Simmer.  Place fish and crab on top and add the rest of the parsley. Simmer 10 -15 minutes and serve.  *To make the fish stock, boil 2 cups water, fish trimmings, and 1 teaspoon salt, then strain.
