One 3 pound lean, boneless pork roast
1 fresh rosemary sprig
1 small white onion, finely chopped
4 ounces unsalted butter
1/4 cup Dijon mustard
Salt and pepper
2 cups hot milk

Tie up the pork roast and insert the rosemary sprig under the string.  Lightly brown the onion in the butter in a casserole. Rub the pork with 3 tablespoons of the mustard and put into the casserole.  Brown the roast on all sides. Sprinkle with salt and pepper and add the hot milk.  Cook, covered, over low heat for about 1 hour, turning occasionally during cooking time. Remove the pork from the casserole. Discard string and rosemary. Carve pork into thin slices and serve on warm dish.  Stir the remaining mustard into the sauce in the pan and cook for a minute or two.  Spoon the sauce over the pork.  Serves 8 to 10.
