8 small tender artichokes, tough outer leaves and stem removed, hard tips cut off, sliced vertically into 8 pieces, and choke hairs if any scraped off
3 tablespoons lemon juice plus 2 lemons, cut into wedges
2 cups olive oil
2 teaspoons salt
1/4 teaspoon freshly ground black pepper
6 plump breasts of chicken, boned
1 1/2 cups flour
1 cup dry white wine

Soak cleaned and sliced artichokes in water to cover with the lemon juice for 20 to 30 minutes.  Drain and dry on paper towels. Heat olive oil in deep heavy skillet and fry artichokes for about 30 minutes, over low heat, seasoning them with 1 teaspoon salt and 1/8 teaspoon black pepper, stirring occasionally.  Prepare chicken breast by shaking them in a bag with 1 1/2 cups flour and the remaining salt and black pepper. When artichokes are done, remove from skillet, drain well on paper towels and keep hot.  Add floured chicken breasts to oil in skillet, brown on all sides, then cover and cook, over low heat, for about 20 minutes, or until tender, turning occasionally. Drain chicken and place on heated serving dish.  Pour off all but 1 tablespoon of the pan juices. Add the white wine, and cook until half is evaporated, scraping bottom of skillet for brown particles. Arrange artichokes around chicken, pour wine sauce over both, and serve with lemon wedges.  Serves 6. Critics rate
