1 - 5 pound salmon, filleted, with the skin on
1 stick (4 ounces) unsalted butter, at room temperature
1 tablespoon fresh lemon juice
1/4 cup minced fresh chives
1/4 cup minced fresh dill
Coarse sea salt
Freshly cracked black pepper

Preheat the broiler.  Place a broiler pan in the broiler for about 5 minutes to heat, then brush it lightly with oil. Place the salmon on the hot broiler pan, skin side down. Broil about 3 inches from the heat for about 10 minutes, just until opaque but still slightly rare in the center.  While the salmon cooks, place the butter in a small bowl. Using the back of a spoon, cream the butter with the lemon juice. Gradually blend in the chives and dill.  Transfer the salmon to a warmed platter and dot liberally with the herbed butter. Sprinkle with sea salt and cracked pepper and serve immediately.  8 to 10 servings.
