2 teaspoons peanut oil
5 slices bacon (5 ounces), cut into 1 inch squares
2 teaspoons coarsely chopped garlic
4 ounces medium Shiitake mushrooms, stemmed and quartered
4 ounces Chinese Black mushrooms, stemmed and cut into 1/2 inch dice
4 ounces golden Chanterelle mushrooms, stemmed and quartered
4 ounces Enoki mushrooms
2 tablespoons minced fresh coriander (cilantro)
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper

In a wok, heat the peanut oil over moderately high heat until it starts to smoke. Add the bacon and cook, stirring occasionally, until light brown, 6 to 7 minutes.  Using a slotted spoon, transfer the bacon to paper towels to drain.   Pour off all but 3 tablespoons of the fat. Add the garlic and stir fry for 20 seconds;  do not let the garlic burn. Add the Shiitake and Chinese Black mushrooms and stir fry for 2 minutes.  Stir in the Chanterelles and then the Enokis and stir fry until all the mushrooms are tender and softened, about 2 minutes more.  Just before serving, stir in the coriander, salt, pepper and bacon. Serves 4.
