6 cups fresh butternut squash, peeled and cut in 1/2 inch pieces
1/2 cup chopped onion
1 cup shredded carrots
1 cup chopped celery
2 tablespoons Canola oil
1 1/2 cups bread crumbs
1 teaspoon basil
1 teaspoon thyme
2 cups non-fat plain yogurt
1/2 cup Cheddar
1 egg, beaten
1/4 cup chopped chives
2 tablespoons toasted sesame seeds

Preheat oven to 350 degrees. Spray a 2 quart casserole with non-stick oil.  Steam squash until tender. Sauté onion, carrots and celery in Canola oil.  Remove from heat and stir in bread crumbs, basil, thyme, and salt and pepper to taste.  Place half of the squash in the casserole, cover with stuffing, and then the other half of the squash.  In a saucepan, combine yogurt and cheese over low heat until cheese melts. Remove from heat and whisk in the beaten egg and chives. Pour over squash, then sprinkle sesame seeds over top. Bake 30 minutes.  Serves 8.
