2 2/3 cups all purpose flour
4 tablespoons sugar
1 teaspoon salt
1/2 cup Canola oil
6 tablespoons cold skim milk
6 cups apples, peeled and sliced
1 tablespoon lemon juice
1/2 cup maple syrup
1/2 cup brown sugar
1/2 teaspoon vanilla extract
2 tablespoons cornstarch
4 tablespoons apple juice
1 tablespoon butter
1 tablespoon sugar
1 teaspoon cinnamon

Sift flour, sugar and salt together. In a separate bowl, combine oil and milk. Pour into flour, then blend with a fork and roll into a ball. If too dry to hold together, add a little milk. Wrap in plastic and chill for 15 minutes. Divide dough into 2 pieces. Roll each piece between sheets of wax paper. Place one in pie dish sprayed with non stick spray. After crust if filled (see below), place the other piece on top, pinch edges together, flute and trim. Preheat the oven to 400 degrees. Filling:  Mix apples, lemon juice, maple syrup, brown sugar and vanilla. Dissolve cornstarch in apple juice, stir into apples. Rest 15 minutes then stir again. Pour into crust, spread evenly and dot with butter.  Place top crust on pie as stated above. In the top of the crust make slits. Sprinkle with cinnamon and sugar. Bake for 40 minutes, cool for 20 minutes.  Makes one 9 inch pie.
