10 ounces carrots
3 1/2 ounces ground blanched, skinned almonds
1 ounce Amaretti cookies
4 large eggs, separated
1/3 cup sugar
Grated zest of 1 lemon
1 ounce sifted cornstarch
1/2 teaspoon dry yeast
Butter and dried bread crumbs for the mold
Confectioners sugar

Preheat the oven to 375 degrees.  Peel and finely grate the carrots. Pat dry in a clean dish cloth. Process the almonds to a fine consistency. Crumble the Amaretti cookies.  Beat the egg yolks with the sugar using an electric beater.  Add the grated lemon zest. Add the cornstarch, yeast and a pinch of salt.  Stir in the carrots, almonds, and Amaretti with egg whites. Gently fold into the mixture, little by little. Grease a round 9 inch springform pan and dust with bread crumbs. Pour the batter into it.  Cook in the oven for 45 minutes.  Cover the cake with foil after the first 15 minutes. Dust with sifted confectioners sugar before serving.
