1 lb. Mushrooms
1 small onion
4 whole cloves
1 small bay leaf
2 tablespoons olive oil
1 1/2 tablespoons flour
1 cup skim milk
Pinch of salt
Pinch of pepper
Pinch of nutmeg
3 tablespoons sherry
2 teaspoons grated Parmesan cheese
Optional: 15 shucked oysters

Cut large mushrooms in quarters and small mushrooms in half. Chop onion and tie in cheesecloth with cloves and bay leaf to make a spice bag. In a saucepan over low heat, warm olive oil, then blend in flour. With a whisk, stir in milk, salt, pepper and nutmeg until smooth. Place spice bag in sauce. Cook on low heat 15 minutes, stirring frequently. When thickened, remove spice bag, stir in sherry. Preheat oven top 375 degrees. Spray oven dish with nonstick oil. Place mushrooms and oysters if desired, in dish.  Cover with sauce, then sprinkle with Parmesan. Bake 25 minutes, or until browned on top. Serves 5.
