12 oz. Tagliatelle
3 oz. Olive oil
1 large onion, sliced
1 clove garlic, crushed
4 oz. Pine nuts
14 oz. Can artichoke hearts, drained
2 tablespoons freshly chopped parsley
Parmesan cheese

Cook the Tagliatelle in plenty of salted boiling water for 10 minutes until al dente.  Just before the Tagliatelle is cooked, heat the oil in a frying pan and fry the onion and garlic until starting to brown. Add the pine nuts and cook for 1 minute, then add the artichoke hearts and parsley.  Heat gently for a few minutes.  Drain the Tagliatelle well and add it to the pan; toss until Tagliatelle is well coated in the oil. Stir in a generous handful of grated Parmesan cheese. Transfer to a warmed serving dish and scatter with a little more grated Parmesan. Serves 4.
