1 tablespoon sunflower oil
1 onion, chopped
1 clove garlic, crushed (optional)
14 oz. Can chopped tomatoes
1/3 lb. Mushrooms, sliced
1 yellow pepper cored, seeded and chopped
3 zucchini, sliced
1 teaspoon dried oregano
1 tablespoon chopped parsley
1 teaspoon sugar
1 teaspoon wine vinegar
4 cups fresh pasta shells
1 tablespoon chopped parsley to garnish
Heat the oil in a pan, add the onion and sauté until soft. Add the remaining ingredients, except the pasta, bring to a boil, then simmer for 15 to 20 minutes. Meanwhile, cook the pasta according to instructions. Drain, add to the sauce and toss. Serve with sprinkled parsley. Serves 4.
