2 pounds medium sized baking potatoes
1 ounce melted unsalted butter, plus extra for greasing the dish
Salt and pepper
1 large egg (separated) plus 1 egg yolk
2 ounces soft mild cheese, such as cream cheese
2 ounces grated Parmesan cheese
2 ounces grated Gruyere cheese
1 teaspoon dried thyme
1 teaspoon dried marjoram
2 teaspoons chopped fresh parsley

Wash the potatoes. Peel and cut them in half lengthwise. Scoop out a hole in the center of each, leaving about 1/3 inch raw potato, to make shells. Preheat the oven to 375 degrees. Grease a shallow baking dish well and arrange the potatoes in it, cut sides up. Lightly salt and brush the inside of each potato with melted butter.  Bake in the oven for 45 minutes.  Meantime prepare the filling:  Combine the two egg yolks, the creamy cheese, 2/3 of the grated cheeses, aromatic herbs and the parsley.  Season with salt and pepper. Beat the egg white and fold gently into the cheese mixture.  Remove potatoes from oven.  Put a rounded tablespoon of cheese mixture into the center of each potato. Sprinkle the top with the remaining combined grated cheeses and a little melted butter. Place under the broiler for 2 to 3 minutes or until the top is golden brown. Serves 8.
