"As we graze it grows"

6 medium size, soft Bartlett pears, sliced, and cored
2 cups Amaretto di Saronno liqueur
1 cup water
1 1/2 cups skim milk ricotta cheese
1 - 2 oz. Cadbury chocolate bar

Put the prepared pears in a large lidded saucepan with 1 1/2 cups of the Amaretto liqueur and 1 cup of water.  Boil the liquid and simmer for 20 minutes until the pears are soft.  Put the ricotta cheese in a small saucepan with the remaining Amaretto and stir constantly over low heat until the mixture is smooth and creamy.  Do not boil.  Put the pears in individual serving dishes, spoon on the creamy Amaretto sauce over the pears.  Sprinkle finely grated chocolate over each pear.  Serves 6.
