2 cloves garlic
4 very ripe beefsteak tomatoes
2 small eggplant
1/2 cup green olives
1 bunch basil
2 anchovies
1 tablespoon capers
4 - 5 tablespoons olive oil
1/2 cup hot chicken broth
1/2 teaspoon each salt and pepper
1 3/4 cups pasta twists, Spaghetti or Fusilli
4 quarts water
2 teaspoons salt
Peel the garlic and crush flat. Skin the tomatoes, discarding the central stalks, and chop the flesh into chunks. Wash the eggplants, dry and dice. Quarter the peppers, clean, dry, and shred finely. Pit and coarsely chop the olives. Wash and pat dry basil, and chop finely with anchovies and capers. Heat the oil, fry the garlic until brown, then discard. Fry the diced eggplant, then add the tomatoes, the pepper strips, the anchovies, capers, olives and basil. Leave the mixture to thicken for 30 minutes, adding more broth if needed and season with salt and pepper. Cook the pasta until al dente in boiling salted water, then drain and mix in a preheated serving dish with the vegetables.
