"As we graze it grows"

24 large raw shrimp, in their shells
3 cloves garlic, finely chopped
3 tablespoons finely chopped fresh basil
1 tablespoon fresh thyme leaves
2 tablespoons finely chopped fresh parsley
1 tablespoon coarsely crushed black pepper
Juice of 1 lemon
4 tablespoons olive oil
8 bay leaves
1/4 cup salt pork or Pancetta, cut into 8 small squares

Shell the shrimp and de-vein them either using a de-veiner, or by making a shallow incision in the center with a sharp knife.  Remove and discard the long black vein. Place the shrimp in a bowl with the garlic, chopped herbs, pepper, lemon juice and olive oil.  Mix well, cover and leave to marinate in the refrigerator for at least 6 hours, or preferably overnight.  Preheat the broiler.  Arrange 6 shrimp on each of 4 skewers so that they lie flat, threading a bay leaf and a square of salt pork between every 2 shrimp.  Brush with the remaining marinade.  Place in one layer under the broiler or on a barbecue.  Cook for about 3 minutes. Turn and cook for 3 more minutes.  Serves 4.
