"As we graze it grows"

Today's recipe is in honor of firefighters that lost their lives on 9/11.
Chili is a firehouse favorite.

3 tablespoons vegetable oil or olive oil
2 cups finely chopped onions
2 cloves garlic, finely minced
1 pound ground round steak
1/2 pound ground pork
3 tablespoons chili powder, or more to taste
2 cups fresh or canned tomatoes, preferably Italian plum style
2 cups beef broth or water
1/2 teaspoon celery salt
1 teaspoon cumin seeds
Pinch of Oregano
Cayenne pepper (optional to taste)
2 cups of red kidney beans (cooked)
Salt to taste

Heat the oil in a large saucepan and cook the onions and garlic in it until the onions are wilted. Add the ground round and pork.  Cook, breaking up the meat with a wooden spoon. When the meat has lost it's red color, add the chili powder.  Stir in the tomatoes and half the broth.  Reserve the remaining broth to add as the chili cooks.  Add the celery salt, cumin, oregano, cayenne, salt, and continue to cook. Stir occasionally.  Cook for one to two hours.  Add more broth if needed. Add the beans.
4 - 6 servings.
