"As we graze it grows"

4, 5 oz. Firm textured fish steaks (haddock, tuna, swordfish, or cod)
3 cloves of garlic, crushed
1/4 cup green olive oil
2 cups fresh plum tomatoes, peeled, seeded, and diced
1 cup fresh basil leaves, chopped;  or 2 tablespoons dried basil
1/2 teaspoon Italian herb seasoning

Marinate the fish steaks in the marinade sauce for a minimum of 15 to 30 minutes. (See below.)  Preheat the grill and grease the rack. In a sauté pan, sauté the garlic in the oil for a minute;  add the tomatoes, basil, and Italian herb seasoning, and cook for 3 to 4 minutes. Remove from the heat and set aside.  Place the fish steaks on the rack about 4 inches above the hot coals or high heat.  Brush them with marinade or olive oil. Grill 1 to 2 minutes on each side, turning once. Do not overcook fish. The fish should be slightly undercooked. Place the fish on a serving dish;  spoon the tomato and basil sauce over the top of each fillet and serve. Serves 4.
1 teaspoon Italian herb seasoning
3 cloves garlic crushed
1 cup dry Italian white wine
3 tablespoons green olive oil
1/2 cup fresh Italian parsley, chopped
Juice of 1 medium sized lemon

Place all ingredients in a large bowl, and mix well.
