"As we graze it grows"

2 1/4 cups sugar
1 cinnamon stick
1 large or 2 medium papayas (about 1 1/2 pounds) peeled, seeded and cut lengthwise into thin pieces
1 large or 2 medium mangoes (about 1 1/2 pounds) peeled, pitted and cut lengthwise into thin pieces
1 large or 2 small star fruit (about 8 ounces), thinly sliced
Yogurt or Crème Fraiche, to serve

Sprinkle one third of the sugar over the bottom of a large saucepan.  Add the cinnamon stick and half the papaya, mango and star fruit pieces.  Sprinkle half of the remaining sugar over the fruit pieces in the pan.  Add all the remaining fruit and sprinkle with the rest of the sugar.  Cover the pan and cook the fruit over medium low heat for 35 to 45 minutes, until the sugar melts completely.  Shake the pan occasionally, but do not stir or the fruit will collapse. Uncover the pan and simmer until the fruit begins to appear translucent, about 10 minutes.  Remove the pan from the heat and let cool.  Transfer the fruit and syrup to a bowl, cover and chill overnight.  Serve with yogurt or Crème Fraiche.  Serves 6.
