"As we graze it grows"

2 large fresh bananas
1 tablespoon orange rind, grated
1 tablespoon honey
1/2 cup orange juice
3 tablespoons Amaretto liqueur
1 teaspoon unsalted butter (cut into 4 pieces)
Julienne (Fine Slivers) orange rind (optional)
Vanilla bean (optional)

Preheat oven to 350 degrees. Cut 4 pieces of foil, each 4 x 6 inches.  Peel the bananas, cut them in half lengthwise, and place each half on a foil rectangle.  In a small bowl mix the orange rind, honey, orange juice, and Amaretto, and spoon over the banana halves.  Top each half with a piece of butter. Fold the foil over once and crimp the ends to seal.  Place each wrapped banana half on a baking sheet and bake for 5 to 8 minutes; if the bananas are very ripe they will cook in about 5 minutes.  To serve, slash the bananas into 5 even pieces along the outside edge and curve into semicircles. Pour the juices over the fruit and garnish with the orange rind and vanilla bean.
