"As we graze it grows"

1 1/4 cups wide rice noodles
14 oz. Rump steak
2 tablespoons Soy Sauce
2 tablespoons Sake (rice wine)
1 tablespoon cornstarch
4 scallions
1 1/4 cup mushrooms
3 quarts water
5 tablespoons oil
11/4 cups bean sprouts
1 tsp. Salt
2 tsp. Sugar
3 tbs. White wine vinegar
1 pinch freshly milled black pepper

Leave the noodles to soak for 1 hour covered in cold water.  Cut the steak into strips 1/2 inch thick. Mix 2 tbs. Soy sauce with the rice wine, and turn the strips of meat in it. Then turn in the cornstarch, cover and leave to marinate.  Wash, dry and cut the scallions into rings. Bring the water to a boil, and cook the noodles swiftly for 1 minute, shake in a colander, rinse with cold water and drain.  Heat the oil in a wok or high sided pan, and fry the meat strips for 2 minutes, remove, cover and keep warm. Fry the onion rings for 1 minute in oil, add the mushrooms and the rinsed bean sprouts, and add with the rest of the salt, sugar, vinegar and pepper, and cook for 3 more minutes.  Combine the noodles and the meat.  Stir fry for 2 minutes.
