"As we graze it grows"

6 ounces semisweet chocolate squares
4 ounces bitter chocolate squares
1 cup sugar
2 1/2 pounds cream cheese, room temperature
2 teaspoons vanilla extract
4 eggs, room temperature
3/4 cup sour cream

Base for the Cake:

1 1/2 cups chocolate wafer crumbs
1/2 teaspoon ground cinnamon
6 tablespoons butter, melted

Preheat the oven to 350 degrees.  Grease a 9 inch springform cake pan.  For the shell, mix the chocolate wafer crumbs with the butter and cinnamon. Press evenly in the bottom of the pan.  Melt the semisweet and bitter chocolate in the top of a heavy boiler, or in a heatproof bowl set over hot water.  Set aside.  Beat with an electric mixer, until the cream cheese is smooth.  Then beat in the sugar and vanilla extract.  Add the eggs, one at a time, scraping the bowl with a spatula when necessary.  Add the sour cream. Stir in the melted chocolate.  Pour into the pan.  Bake for 1 hour. Let cool in the pan; remove rim. Chill before serving.  Serves 10 -12.
