"As we graze it grows"

1/2 cup graham cracker crumbs
2 pounds cream cheese
1 1/4 cups sugar
Grated rind of 1 lemon
3 tablespoons fresh lemon juice
1 teaspoon vanilla extract
4 eggs, room temperature

Preheat oven to 325 degrees.  Grease a 9 inch spring-form cake pan. Place on a round of foil 5 inches larger than the diameter of the pan.  Press it up the sides to seal tightly.  Sprinkle the crumbs in the bottom of the pan.  Press it to form an even layer.  With an electric mixer, beat the cream cheese until smooth. Add the sugar, lemon rind and juice, and, vanilla extract; beat until blended.  Beat in the eggs, one a time.  Beat just enough to blend thoroughly.  Pour into the prepared pan. Set the pan in a large baking tray and place in the oven.  Pour enough hot water in the outer tray to come 1 inch up the side of the pan. Bake until the top of the cake is golden brown, about 1 1/2 hours. Let cool in the pan. Run a knife around the edge to loosen, then remove the rim of the pan. Chill for at  least 4 hours before serving.
Serves 8.
