"As we graze it grows"

4 skinless, boneless chicken thighs
1 tablespoon butter
2 small leeks, thinly sliced
2 tablespoons long grain rice
3 3/4 cups chicken stock
1 tablespoon chopped mixed fresh parsley and mint Salt and freshly ground black pepper

For Garlic Croutons:
2 tablespoons olive oil
1 garlic clove, crushed
4 slices bread, cut into cubes

Cut the chicken into 1/2 inch cubes.  Melt the butter in a saucepan. Add the leeks and cook until tender.  Add the rice and chicken and cook for 2 minutes.  Add the stock. Cover the pan and simmer for 15 to 20 minutes until the rice is tender.  To make the garlic croutons, heat the oil in a large skillet.  Add the crushed garlic clove and bread cubes and cook until the bread is golden brown, stirring all the time to prevent burning.  Drain on paper towels and sprinkle with salt.  Add the parsley and mint to the soup and adjust the seasoning to taste.  Serve with the croutons.
