"As we graze it grows"

1 1/2 pound green fettuccine noodles
1/2 cup water
1 cup skim milk ricotta cheese
1/2 cup Parmesan cheese, freshly grated (plus 4 tablespoons to toss with the pasta)
1/2 teaspoon Italian herb seasoning
Dash of Cayenne pepper
3 tablespoons fresh Italian parsley, minced
1/4 cup Gorgonzola Cheese

Boil water to cook the pasta. In a large saucepan, combine the water, ricotta and Parmesan cheeses, Italian herb seasoning, and the cayenne pepper;  heat over a low flame and stir constantly for about 5 minutes to keep smooth.  Add the parsley and stir another 2 minutes.  Drain the pasta and put it in a large pasta bowl.  Toss the pasta with Parmesan cheese, and pour the cheese sauce over it;  blend thoroughly.  Sprinkle with Gorgonzola cheese.  Add cayenne pepper to taste.  Serve pasta immediately.
Serves 8.
