"As we graze it grows"

3/4 pound linguine
1/2 tablespoon sweet, unsalted butter
1 tablespoon green olive oil
1 cup onion, chopped
2 cups fresh mushrooms, chopped
3 cloves of garlic, finely chopped
1/2 teaspoon Italian herb seasoning
1/2 cup fresh Italian parsley, chopped
2 bunches of spinach, chopped; or 1 packet of chopped spinach, thawed and drained
1 cup red pepper, diced
2 slices of prosciutto, diced (trim off fat)
1/2 cup Parmesan cheese, freshly grated

Boil water for the pasta. Melt the butter with the olive oil in a large skillet, and sauté the onion, mushrooms, and garlic.  Add the Italian herb seasoning, parsley, spinach, and red pepper. If you are using frozen spinach, drain off any surplus liquid.  Add the diced prosciutto and sauté together for 5 to 8 minutes.  Cook the linguine al dente.  Drain the cooked linguine in a colander and add it to the sauce in the skillet.  Toss the linguine in the sauce and sprinkle with Parmesan cheese.  Serve immediately.  Linguine serves 4.
