"As we graze it grows"

2 tablespoons olive oil
1 small onion, thinly sliced
2 large garlic cloves, minced
1 pound zucchini, cut into thin strips
1 medium red bell pepper, cut in thin strips
1 pound ripe tomatoes, peeled, seeded, and cut into 1/2 inch dice
1 tablespoon chopped fresh oregano or 1 teaspoon dried
1/2 cup water
1/4 cup chopped fresh basil or 1 teaspoon dried
1 teaspoon salt
1/4 teaspoon pepper
1 pound ziti
6 ounces provolone cheese, cut into 1/2 inch dice

In a large frying pan,  heat olive oil over medium heat.  Add onion and garlic and cook 3 to 4 minutes, or until onion is softened.  Add zucchini and red pepper and cook, stirring 3 to 4 minutes, or until vegetables are slightly softened.  Add tomatoes, oregano, and water.  Cook until zucchini and red pepper are crisp tender, and sauce just begins to thicken, 3 to 5 minutes. Stir in basil, salt, and pepper.  Meanwhile, cook ziti in a pot of boiling salted water until tender about 8 to 10 minutes;  drain.  Pour half of sauce onto a warmed platter. Pour hot pasta on top of sauce.  Sprinkle with provolone cheese.  Pour remaining sauce over the top.
