"As we graze it grows"

6 pork loin chops, cut 1 inch thick, about 10 ounces each
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup soft bread crumbs
1/2 cup shredded smoked mozzarella or smoked Gouda cheese
1/4 cup chopped prosciutto or ham
2 tablespoons olive oil
1/2 cup water

Trim excess fat from chops.  With a sharp knife, slit a pocket in meaty part of each chop, cutting toward bone.  Season chops with salt and 1/4 teaspoon pepper.  In a small bowl, combine bread crumbs, cheese, prosciutto or ham, and remaining 1/4 teaspoon pepper.  Stuff filling into chops, fasten closed with toothpicks.  In a large frying pan, heat olive oil over medium high heat.  Add chops and cook, turning once, 3 to 5 minutes or until browned on both sides.  Add water and bring to a boil.  Reduce heat to low, cover, and cook 20 to 30 minutes, or until tender and white throughout, turning once. Remove toothpicks from Pork Chops and serve.  Serves 6.
