"As we graze it grows"

6 chicken legs, about 1 1/2 pounds
6 chicken thighs, about 1 1/2 pounds
1 teaspoon salt
1/4 teaspoon pepper
3 tablespoon olive oil
1 large onion, finely chopped
3 garlic cloves, chopped
1 14 ounce can Italian peeled tomatoes, drained and chopped
1 cup water
1 large green bell pepper, cut into 1 inch squares
1 large red bell pepper cut into 1 inch squares
2 teaspoons chopped fresh oregano or 1/2 teaspoon dried
2 tablespoons minced fresh parsley

Rinse chicken and pat dry.  Season with salt and pepper.  In a Dutch oven heat 1 1/2 tablespoons olive oil over medium high heat. Add chicken, in batches if necessary, and cook, turning, 5 minutes, or until lightly browned on all sides. Remove chicken and set aside. Pour off fat.  Add remaining 1 1/2 tablespoons olive oil to Dutch oven.  Add onion and cook over medium heat 3 minutes, or until softened.  Add garlic and cook 1 minute longer. Return chicken to pan.  Add tomatoes, water, bell peppers, oregano, and parsley. Bring to a boil, reduce heat to low, cover, and simmer 25 to 30 minutes, or until chicken is fork tender.  Season sauce with additional salt and pepper, if needed.
