NYC Restaurant Reviews - "As we graze it grows"

2 tablespoons extra virgin olive oil
4 flat anchovy fillets
1/4 teaspoon hot pepper flakes
2 garlic cloves, minced
1 14 ounce can Italian peeled tomatoes, drained and chopped
1 cup water
2 tablespoons capers, rinsed and drained
2 tablespoons minced fresh parsley
4 swordfish steaks, cut 1/2 inch thick, about 7 ounces each

Preheat oven to 375 degrees.  In a large frying pan over medium heat, heat olive oil.  Add anchovies, hot pepper flakes, and garlic and mash together with back of a wooden spoon until anchovies dissolve in oil, 2 to 3 minutes.  Stir in tomatoes and water and bring to a boil.  Cook uncovered until sauce is reduced to a thick puree, 6 to 8 minutes. Remove from heat and stir in capers and parsley.  Spread one third of sauce over bottom of a 13 x 11 inch baking pan.  Place swordfish on sauce and spoon remaining sauce over top.  Cover with foil and bake 15 to 18 minutes, or until fish is opaque throughout but juicy when tested with a fork.
